Hello All: Happy Thanksgiving! I had a number of PCVs over for Friday “Game Morning” so had to put out a spread. Quiches, sausages, fruit salad, cinnamon rolls, and bagels. I used Jeffrey Hamelman’s recipe which is available if googled. It is the best I have tried and though it gives the kitchen aid a work out it is worth it. Chewy, dense, and nicely rounded and risen! The bagels are fermented overnight in the fridge

They sink at first, when risen boil for two minutes a side

After boling, into the ice bath! A little odd at first but really works on the texture

The recipe doesn't call for it but I place on a towel for a second and then top

After draining, place in topping and then topping side down on sheet pan

Cook for 500 degrees for 4 mintues, then flip. That dries them out from the ice bath.

After flipping, another 13 minutes and then voila!

Cream cheese anyone!
